Who wants to cook all day long? Not me! I like recipes that are easy, taste good and are healthy-ish; you have to treat yourself to a “unhealthy meal” every now and then. Slow cookers are one of my secret weapons in the kitchen because I can throw all the ingredients in and not worry about it until later in the day.
I have been reading Carrie Underwood’s book, Find Your Path: Honor Your Body, Fuel Your Soul, and Get Strong with the Fit52 Life. It has been such a fun, easy and inspirational read, and I highly recommend it. One of the things I have been enjoying in her book is her recipes. She has a similar cooking philosophy to me and enjoys easy, healthy recipes. Nate and I decided to try out Carrie’s Ugly Lasagna, and after making it I can honestly say it is now one of our favorite recipes. I posted about it on my Instagram Story and after lots of questions and comments I thought I would share my version of her recipe.
The best thing about this recipe is the fact that it can be modified and adjusted to your liking or dietary restrictions. Carrie Underwood shared her recipe with the TODAY show. I used two slow cookers – one for Nate and one for me. This allowed me to have a version that is gluten, dairy and soy free where Nate was able to have his version with all the gluten and dairy.
Carrie Underwood’s recipe says to use cooking spray, I greased my slow cookers with olive oil.
We added 2 pounds of ground beef and split it between the two slow cookers (we each had 1 pound of ground beef in our lagunas).
Veggies we added: mushrooms, bell peppers, onion!
We cooked the lasagnas for about 3 hours.
Gluten-Free Lasagna Noodles used: Tinkyada, Brown Rice Pasta with Rice Bran, Lasagne
“Regular”/Gluten Lasagna Noodles used: Amazon Brand – Happy Belly Pasta, Lasagna
Vegan Mozzarella used: Trader Joe’s – Dairy Free – Mozzarella Style Shreds – Cashew Cheese Alternative
“Regular” cheese used: Mozzarella shreds and Ricotta cheese
